Chorizo & mozzarella gnocchi bake Recipe

INGREDIENTS

  • 1 tablespoon of olive oil
  • 120 g chorizo, cut into cubes
  • 2 x 400g chopped tomatoes
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 teaspoon caster sugar
  • 600gm fresh gnocchi
  • 125gm mozzarella cheese ball, cut into pieces
  • A small bunch of shredded basil
  • Green salad to serve

METHOD

Step 1

Heat the oil in a medium frying pan over medium heat. Fry onion and garlic for 8-10 minutes, until soft. Add chorizo and fry for another 5 minutes. Tip on tomato, sugar and seasoning. Leave the mixture on low heat, add the gnocchi and cook for 8 minutes, stirring constantly, until soft. Heat the grill over high heat.

Step 2

Stir half of the mozzarella cheese and most of the basil through the gnocchi. Divide the mixture over six baking dishes, or place them on a baking dish. Top with the remaining amount of mozzarella, then grill it for 3 minutes, or until the cheese melts and becomes golden. Season it, and spread it over the remaining basil, and serve with a green salad.
